- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 6-7 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, reduce heat to medium and add chicken broth. Bring to a gentle simmer, scraping up any bits from the bottom.
- Add Boursin cheese and heavy cream to the skillet. Stir until the cheese melts and the sauce is smooth.
- Taste the sauce and adjust seasoning with salt and pepper as needed.
- Return the chicken to the skillet, spooning the sauce over it. Heat through for a couple of minutes.
- Transfer the chicken to a serving platter and garnish with chopped parsley and chives. Serve hot.
