Method
 

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 6-7 minutes on each side until golden brown and cooked through.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, reduce heat to medium and add chicken broth. Bring to a gentle simmer, scraping up any bits from the bottom.
  5. Add Boursin cheese and heavy cream to the skillet. Stir until the cheese melts and the sauce is smooth.
  6. Taste the sauce and adjust seasoning with salt and pepper as needed.
  7. Return the chicken to the skillet, spooning the sauce over it. Heat through for a couple of minutes.
  8. Transfer the chicken to a serving platter and garnish with chopped parsley and chives. Serve hot.
