Method
 

  1. In a medium bowl, whisk together the peanut butter, soy sauce, chicken broth, honey, minced garlic, and grated ginger until smooth and well combined. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper on both sides.
  3. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until the chicken is cooked through and golden brown. The internal temperature should reach 165°F (75°C).
  4. Pour the peanut butter sauce over the cooked chicken in the skillet. Reduce the heat to low and let it simmer for about 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  5. Remove the skillet from heat and garnish the chicken with chopped green onions. Serve the chicken with the peanut sauce over cooked rice or noodles.
