Ingredients
  

For the Chipotle Chicken

For the Avocado Crema

  • 1 ripe Avocado Base for the creamy sauce.
  • 1/2 cup Sour cream Adds creaminess to the sauce.
  • 1 tablespoon Lime juice For a zesty flavor.

For Assembly

  • 8 small Corn or flour tortillas For holding the filling.

Instructions
 

  • In a large bowl, mix together olive oil, chipotle sauce, ground cumin, smoked paprika, garlic powder, salt, and pepper to create the marinade.
  • Add the chicken thighs to the marinade, ensuring they are well-coated. Marinate for at least 30 minutes, or overnight for best flavor.
  • Preheat your grill or skillet over medium-high heat. Cook the marinated chicken thighs for about 6-7 minutes on each side until fully cooked (internal temperature of 165°F or 75°C).
  • Remove the chicken from heat and let it rest for a few minutes before slicing.
  • In a blender or food processor, combine avocado, sour cream, lime juice, and a pinch of salt. Blend until smooth and creamy.
  • Warm the tortillas in a dry skillet or over a flame. Distribute the sliced chicken evenly among the tortillas.
  • Drizzle the avocado crema over the chicken and garnish with fresh cilantro and sliced radishes if desired.
  • Serve immediately with lime wedges on the side.
