- In a small bowl, combine brown sugar and ground cinnamon. Add softened butter and mix until smooth. Set aside.
- In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix buttermilk, egg, melted butter, and vanilla extract. Pour wet ingredients into dry ingredients and stir gently until just combined.
- Preheat a non-stick skillet over medium heat. Pour 1/4 cup of batter onto the skillet and drizzle cinnamon filling in a spiral pattern on top.
- Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
- In a medium bowl, beat together cream cheese, powdered sugar, milk, and vanilla extract until smooth to make the glaze.
- Serve pancakes stacked high, drizzled with cream cheese glaze.
