Method
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a medium bowl, whisk together the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- In a large mixing bowl, combine granulated sugar, brown sugar, and vegetable oil. Mix until well combined.
- Add eggs one at a time, mixing well after each addition. Stir in pumpkin puree, buttermilk, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- In a small bowl, mix together the streusel ingredients: flour, brown sugar, cinnamon, and softened butter until crumbly.
- Pour half of the pumpkin bread batter into the prepared loaf pan. Sprinkle half of the streusel over the batter. Pour the remaining batter on top and finish with the rest of the streusel.
- Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
