- In a large skillet, cook the breakfast sausage over medium heat, breaking it apart until browned and fully cooked, about 5-7 minutes. Drain excess fat.
- Add the finely chopped onion and diced bell pepper to the skillet with the cooked sausage. Sauté for about 3-4 minutes until softened and fragrant. Remove from heat.
- In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until well combined.
- Stir in the cooked sausage and vegetable mixture, cubed bread, and shredded cheddar cheese until evenly coated with the egg mixture.
- Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.
- Pour the egg and sausage mixture into the prepared baking dish, spreading it out evenly.
- Bake in the preheated oven for 35-40 minutes, or until the casserole is set in the center and lightly golden on top.
- Allow the casserole to cool for a few minutes before slicing. Garnish with fresh chopped parsley if desired.
