Ingredients
  

  • 1 pound Breakfast sausage Choose your favorite brand or type, whether it’s spicy or mild.
  • 1 small Onion Finely chopped to add sweetness and depth to the dish.
  • 1 medium Bell pepper Diced for a pop of color and crunch; any color works!
  • 8 large Eggs The base of the casserole, providing protein and richness.
  • 2 cups Milk Adds creaminess and helps bind the ingredients together.
  • 1 teaspoon Salt Enhances the overall flavor of the casserole.
  • 1/2 teaspoon Black pepper For a touch of heat and seasoning.
  • 1 teaspoon Garlic powder Adds a savory note that complements the sausage.
  • 1 teaspoon Onion powder Boosts the onion flavor without the texture.
  • 4 cups Cubed bread Preferably day-old, to absorb the egg mixture without getting soggy.
  • 2 cups Shredded cheddar cheese Melts beautifully and adds a rich, cheesy flavor.
  • 1/4 cup Fresh parsley Chopped for garnish, adding a fresh touch to the finished dish.

Instructions
 

  • In a large skillet, cook the breakfast sausage over medium heat, breaking it apart until browned and fully cooked, about 5-7 minutes. Drain excess fat.
  • Add the finely chopped onion and diced bell pepper to the skillet with the cooked sausage. Sauté for about 3-4 minutes until softened and fragrant. Remove from heat.
  • In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until well combined.
  • Stir in the cooked sausage and vegetable mixture, cubed bread, and shredded cheddar cheese until evenly coated with the egg mixture.
  • Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.
  • Pour the egg and sausage mixture into the prepared baking dish, spreading it out evenly.
  • Bake in the preheated oven for 35-40 minutes, or until the casserole is set in the center and lightly golden on top.
  • Allow the casserole to cool for a few minutes before slicing. Garnish with fresh chopped parsley if desired.
  • Serve warm, paired with fresh fruit, yogurt, or crispy bacon.
