Ingredients
  

  • 1.5 pounds ground beef
  • 1 cup breadcrumbs panko or regular
  • 0.5 cup milk
  • 1 large egg
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 0.25 cup ketchup plus more for topping
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 1 teaspoon dried thyme or Italian seasoning
  • 0.5 cup grated carrot or zucchini optional

Method
 

  1. Preheat oven to 350°F (180°C).
  2. In a large mixing bowl, combine breadcrumbs and milk. Let soak for 1 minute.
  3. Add the egg, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, and herbs. Stir until fully combined.
  4. Add the ground beef and gently mix with your hands until just incorporated — do not overmix.
  5. Shape the mixture into a loaf on a foil-lined baking sheet or place it into a loaf pan.
  6. Spread a thin layer of ketchup over the top for a classic glaze.
  7. Bake for about 60 minutes, or until the internal temperature reaches 160°F.
  8. Let the meatloaf rest for 10 minutes before slicing to allow juices to redistribute.

Notes

Substitute half the beef with ground pork if desired. Breadcrumb alternatives include oats or crushed crackers. Avoid overmixing to keep the meatloaf tender.
