Method
- Preheat oven to 350°F (175°C).
- Heat oil in a skillet and sauté onion and bell pepper for 5–7 minutes.
- Add garlic and cook 1 minute more. Remove from heat.
- In a mixing bowl, combine ground beef, sautéed vegetables, breadcrumbs, eggs, Worcestershire sauce, ketchup, salt, and pepper.
- Mix gently by hand until just combined.
- Fold in shredded cheese evenly.
- Transfer to a greased loaf pan or shape into loaf on lined baking sheet.
- Press firmly and top with a thin layer of ketchup.
- Bake for 60–75 minutes or until internal temp reaches 160°F (70°C).
- Rest 10–15 minutes before slicing.
Notes
Letting the meatloaf rest is key for juicy slices. Use a thermometer for accuracy. Leftovers make great sandwiches.
