Classic Philly Cheesesteak Meatloaf

Ingredients
  

  • 2 lbs ground beef 80/20 blend
  • 1 medium onion finely chopped
  • 1 medium green bell pepper diced
  • 2-3 cloves garlic minced
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 cup shredded provolone or mozzarella cheese
  • 2 tbsp Worcestershire sauce
  • 1/2 cup ketchup plus extra for topping
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Heat oil in a skillet and sauté onion and bell pepper for 5–7 minutes.
  3. Add garlic and cook 1 minute more. Remove from heat.
  4. In a mixing bowl, combine ground beef, sautéed vegetables, breadcrumbs, eggs, Worcestershire sauce, ketchup, salt, and pepper.
  5. Mix gently by hand until just combined.
  6. Fold in shredded cheese evenly.
  7. Transfer to a greased loaf pan or shape into loaf on lined baking sheet.
  8. Press firmly and top with a thin layer of ketchup.
  9. Bake for 60–75 minutes or until internal temp reaches 160°F (70°C).
  10. Rest 10–15 minutes before slicing.

Notes

Letting the meatloaf rest is key for juicy slices. Use a thermometer for accuracy. Leftovers make great sandwiches.
