Ingredients
  

  • 4 cups mixed greens such as romaine, arugula, and spinach
  • 2 hard-boiled eggs chopped
  • 1 cup cooked chicken breast diced or shredded
  • 1 cup cherry tomatoes halved
  • 0.5 cup blue cheese crumbled
  • 4 slices bacon crispy, chopped
  • 1 avocado diced
  • 0.25 cup green onions sliced
  • 0.5 cup salad dressing such as red wine vinaigrette or ranch
  • salt and pepper to taste

Method
 

  1. Chop eggs, dice avocado and chicken, slice tomatoes and green onions.
  2. In a skillet over medium heat, cook bacon until crisp. Let cool, then chop.
  3. Season raw chicken with salt and pepper, then grill or pan-sear until fully cooked. Let rest before dicing.
  4. Layer mixed greens in a large bowl.
  5. Arrange chicken, bacon, avocado, eggs, tomatoes, and blue cheese on top.
  6. Drizzle evenly with chosen dressing.
  7. Add salt and pepper as needed.
  8. Gently toss to mix or leave arranged for presentation.

Notes

Use fresh ingredients for best results. Assemble right before serving. Not recommended for freezing. Customize with cucumbers, red onion, or different dressings.
