Instructions
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Prepare the Cake Batter:In a medium bowl, whisk together the flour, baking powder, and salt. In a large bowl, cream the butter and sugar together until light and fluffy, about 3 minutes. Add the eggs one at a time, then mix in the vanilla extract.
Combine Wet and Dry Ingredients:
Gradually add the flour mixture to the creamed butter, alternating with the milk. Begin and end with the dry ingredients, mixing just until combined.
Divide and Color the Batter:
Divide the batter into four equal portions. Use food coloring to dye each portion a different vibrant color (green, red, yellow, and blue), stirring until the colors are well incorporated.
Bake the Cakes:
Pour the colored batters into the prepared pans, creating layers of your desired colors. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Make the Frosting:
While the cakes cool, prepare the frosting. Beat the softened butter until smooth. Gradually add powdered sugar, vanilla extract, and heavy cream. Beat until fluffy, about 3 minutes. Add food coloring for additional decorative frosting if needed.
Assemble the Cake:
Once the cakes are cooled, level them using a serrated knife. Place the first cake layer on a serving plate and spread a layer of frosting on top. Repeat with the remaining layers. Use the remaining frosting to cover the entire cake in a smooth layer.
Decorate:
For the Cocomelon theme, use fondant to shape characters like JJ or create a watermelon design, or apply pre-made edible toppers. Decorate with bright colors, sprinkles, or candies as desired.
