Ingredients

Cabbage
  • 1 large head cabbage chopped into bite-sized pieces
  • 1 medium onion sliced thinly
  • 2 cloves garlic minced
  • 2 tablespoons olive oil for sautéing
  • 1 teaspoon smoked paprika adds a smoky flavor
  • 1 teaspoon salt enhances the overall taste
  • 1/2 teaspoon black pepper for a hint of spice
  • 1 cup vegetable broth provides moisture and depth
  • 1 tablespoon apple cider vinegar adds a tangy kick
  • 1 teaspoon sugar balances the flavors
  • 1/2 teaspoon red pepper flakes optional, for those who like it spicy
  • Fresh parsley chopped, for garnish

Equipment

  • large skillet or pot

Method

  1. Prepare the cabbage by removing the core and chopping it into bite-sized pieces. Rinse under cold water and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté the sliced onion for about 5 minutes until translucent, then add minced garlic and sauté for an additional minute.
  3. Add the chopped cabbage to the skillet along with smoked paprika, salt, and black pepper. Cook for about 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth, apple cider vinegar, and sugar. If desired, add red pepper flakes. Stir well to combine.
  5. Reduce heat to low, cover, and let simmer for 20-25 minutes, stirring occasionally until the cabbage is tender.
  6. Remove from heat and garnish with freshly chopped parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat with a splash of vegetable broth.
