Method
- Prepare the cabbage by removing the core and chopping it into bite-sized pieces. Rinse under cold water and set aside.
- In a large skillet, heat olive oil over medium heat. Sauté the sliced onion for about 5 minutes until translucent, then add minced garlic and sauté for an additional minute.
- Add the chopped cabbage to the skillet along with smoked paprika, salt, and black pepper. Cook for about 5 minutes, stirring occasionally.
- Pour in the vegetable broth, apple cider vinegar, and sugar. If desired, add red pepper flakes. Stir well to combine.
- Reduce heat to low, cover, and let simmer for 20-25 minutes, stirring occasionally until the cabbage is tender.
- Remove from heat and garnish with freshly chopped parsley before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat with a splash of vegetable broth.
