- Preheat your oven to 375 degrees F (190 degrees C) and allow it to fully preheat before baking.
- Spread the cottage cheese in an even layer across the bottom of a medium baking dish.
- Spoon the marinara sauce generously over the cottage cheese, covering edge to edge.
- Scatter the chopped bell peppers and sliced mushrooms evenly across the sauce.
- Add the spinach or kale on top of the vegetables.
- Top with shredded mozzarella and any optional toppings like olives or diced onions.
- Drizzle with olive oil and season with salt and pepper. Add a pinch of dried oregano if desired.
- Bake for 20-25 minutes until the cheese is fully melted and lightly golden on top.
- Remove from the oven, rest for 3-5 minutes, garnish with fresh basil, and serve hot.
Notes
