Ingredients
  

  • 1 cup cottage cheese low-fat or full-fat
  • 1 cup marinara sauce store-bought or homemade
  • 0.5 cup bell peppers chopped, any color
  • 0.5 cup mushrooms sliced thin
  • 0.5 cup spinach or kale chopped
  • 0.5 cup shredded mozzarella cheese
  • 1 tbsp olive oil for drizzling
  • salt and pepper to taste
  • sliced olives, diced onions, fresh basil optional toppings

Method
 

  1. Preheat your oven to 375 degrees F (190 degrees C) and allow it to fully preheat before baking.
  2. Spread the cottage cheese in an even layer across the bottom of a medium baking dish.
  3. Spoon the marinara sauce generously over the cottage cheese, covering edge to edge.
  4. Scatter the chopped bell peppers and sliced mushrooms evenly across the sauce.
  5. Add the spinach or kale on top of the vegetables.
  6. Top with shredded mozzarella and any optional toppings like olives or diced onions.
  7. Drizzle with olive oil and season with salt and pepper. Add a pinch of dried oregano if desired.
  8. Bake for 20-25 minutes until the cheese is fully melted and lightly golden on top.
  9. Remove from the oven, rest for 3-5 minutes, garnish with fresh basil, and serve hot.

Notes

Pre-roast denser vegetables like broccoli for 10 minutes before adding them to the dish. Cooked Italian sausage or ground turkey can be added to the vegetable layer for extra protein. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
