Cowboy Breakfast Sliders

Hearty mini breakfast sandwiches with scrambled eggs, pork sausage, bacon, and sharp cheddar cheese on Hawaiian rolls, all enhanced with herb-infused cowboy butter.

Ingredients
  

  • 6 large eggs scrambled until just set
  • 8 ounces ground pork sausage cooked and drained
  • 6 slices thick-cut bacon cooked and crumbled (about 1 cup)
  • 1 cup sharp cheddar cheese shredded (113g)
  • 1 package King's Hawaiian Rolls 12-count
  • 1 recipe cowboy butter melted, divided

  • Cooking spray
  • Aluminum foil
  • Pastry brush

Method
 

  1. Preheat the oven to 350°F. Lightly spray a 7x11-inch baking dish with cooking spray and set aside.
  2. Split the Hawaiian rolls in half horizontally, keeping them connected, and place the bottom halves in the prepared baking dish.
  3. Evenly pour about 2 tablespoons of melted cowboy butter over the bottom halves of the rolls in the pan.
  4. Layer the scrambled eggs evenly over the rolls, followed by the cooked sausage, crumbled bacon, and shredded cheese.
  5. Place the top halves of the rolls on top of the cheese layer. Brush the tops generously with 2 tablespoons of melted cowboy butter.
  6. Cover the dish with aluminum foil and bake for 15 minutes, or until the cheese is hot and bubbly.
  7. Remove the foil and bake for an additional 3-5 minutes, or until the tops of the sliders turn golden brown.
  8. Remove from oven and slice into individual sliders. Brush with remaining cowboy butter or serve it on the side for dipping.

Notes

Make Ahead: Assemble sliders without cowboy butter, wrap tightly, and refrigerate for 1-2 days or freeze for up to 2 months. Brush with cowboy butter just before baking. For easier slicing, place Hawaiian rolls in freezer for 10-15 minutes before cutting. Mix cooked sausage, bacon, and cheese together before layering for better distribution. Total prep time includes cooking eggs, sausage, and bacon.
