- Preheat your oven to 375°F (190°C).
- Cut off the tops of the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
- In a large mixing bowl, combine crab meat, chopped shrimp, cooked rice, softened cream cheese, and mayonnaise. Mix in Old Bay seasoning, garlic powder, paprika, salt, and pepper until well combined.
- Stuff each bell pepper with the seafood mixture, packing it down gently.
- Sprinkle shredded cheddar cheese on top of each stuffed pepper. Cover the baking dish with aluminum foil.
- Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Let the stuffed peppers cool slightly before serving. Garnish with fresh parsley.
