For the Crab Custard:
- 1/2 pound fresh crab meat blue, king, or snow crab
- 1 cup heavy cream
- 3 large egg yolks
- 1 tablespoon finely grated Parmesan cheese
- 1 teaspoon Dijon mustard
- 1/2 teaspoon Old Bay seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon freshly cracked black pepper
- 1/4 teaspoon lemon zest
- Pinch of cayenne pepper optional
For the Brulee Topping:
- 2 tablespoons granulated sugar
Optional Garnish:
- Fresh chives finely chopped
- Lemon wedges
Preheat the Oven: Preheat your oven to 325°F (165°C). Prepare a baking dish with a water bath by filling it halfway with hot water.
