- In a large bowl, mix mashed potatoes and shredded cheese. Season with salt and pepper. Cover and chill for at least 30 minutes.
- Shape the chilled mixture into balls or ovals, about the size of a golf ball.
- Set up a breading station with flour, beaten eggs, and breadcrumbs in separate dishes. Coat each croquette in flour, then egg, and finally breadcrumbs.
- Heat oil in a deep skillet to 350°F (175°C). Fry croquettes in batches for 3-4 minutes on each side until golden brown.
- Drain on paper towels and garnish with fresh parsley before serving.
