Ingredients
  

For the Croquettes

  • 2 cups mashed potatoes Smooth and creamy for best results.
  • 1 cup shredded cheese Cheddar or mozzarella works well.
  • 1/2 cup all-purpose flour For coating.
  • 1/2 cup breadcrumbs Plain or seasoned.
  • 2 large eggs Beaten.
  • to taste salt and pepper For seasoning.
  • as needed oil for frying Use a neutral oil like vegetable or canola.
  • to garnish fresh parsley, chopped For garnish.

Instructions
 

  • In a large bowl, mix mashed potatoes and shredded cheese. Season with salt and pepper. Cover and chill for at least 30 minutes.
  • Shape the chilled mixture into balls or ovals, about the size of a golf ball.
  • Set up a breading station with flour, beaten eggs, and breadcrumbs in separate dishes. Coat each croquette in flour, then egg, and finally breadcrumbs.
  • Heat oil in a deep skillet to 350°F (175°C). Fry croquettes in batches for 3-4 minutes on each side until golden brown.
  • Drain on paper towels and garnish with fresh parsley before serving.

Notes

These croquettes are best served hot and can be paired with various dipping sauces.
