  • 1 lb boneless, skinless chicken breasts 3-4 breasts, cut into bite-sized pieces
  • 16 oz gnocchi fresh or frozen
  • 8 oz cream cheese
  • 2 cups low-sodium chicken broth
  • 4 cups fresh spinach
  • 1 cup shredded cheddar cheese
  • 1/2 cup crispy bacon bits
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp cooking oil

Method
 

  1. Prepare your ingredients by chopping chicken into uniform bite-sized pieces, measuring gnocchi, and having cheeses ready.
  2. Heat oil in a large skillet over medium-high heat. Add chicken pieces in a single layer and cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through.
  3. Lower heat to medium. Add cream cheese and chicken broth to the skillet, stirring patiently for 2-3 minutes until cream cheese fully melts and sauce becomes smooth.
  4. Add gnocchi, fresh spinach, garlic powder, onion powder, salt, and pepper. Cover skillet and simmer for 5-7 minutes, stirring occasionally, until gnocchi are tender.
  5. Stir in shredded cheddar cheese and bacon bits until cheese melts completely into the sauce.
  6. Taste and adjust seasoning if needed. Serve immediately in bowls, garnished with extra cheese if desired.

Notes

Use low-sodium chicken broth to control salt levels. Fresh or frozen gnocchi both work beautifully. Don't overcook gnocchi - they should be tender but not mushy. Store leftovers in airtight container for up to 3 days. Reheat gently on stovetop with splash of broth to restore creaminess.
