Method
 

  1. Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  4. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese and Italian seasoning, mixing until the cheese is melted and the sauce is smooth.
  5. Add the chopped spinach to the sauce and cook for an additional 2-3 minutes until wilted.
  6. Place the cooked chicken breasts back into the skillet, spooning the creamy sauce over them. Let it simmer for a couple of minutes to heat through.
  7. Serve the creamy garlic Parmesan chicken hot, garnished with fresh parsley.
