- Boil a large pot of salted water and cook the fettuccine or spaghetti according to package instructions until al dente, about 8-10 minutes. Reserve 1/2 cup of pasta water before draining.
- In a large skillet, heat olive oil over medium heat. Add the shrimp, season with salt, pepper, and Italian seasoning, and cook for 2-3 minutes on each side until pink and opaque. Remove shrimp from skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and creamy. Adjust consistency with reserved pasta water if needed.
- Add the cooked pasta and shrimp back into the skillet. Toss gently to coat everything in the creamy sauce. Adjust seasoning with more salt and pepper if needed.
- Plate the pasta and garnish with chopped parsley. Serve immediately while hot.
