- Prepare the shrimp by ensuring they are peeled and deveined. Season with salt, pepper, and optional red pepper flakes.
- Cook the pasta in a large pot of salted boiling water according to package instructions. Drain and reserve 1 cup of pasta water.
- In a large skillet, heat olive oil over medium heat. Add the seasoned shrimp and cook for 2-3 minutes until pink and opaque. Remove from skillet and set aside.
- In the same skillet, add minced garlic and optional red pepper flakes. Sauté for 1 minute until fragrant.
- Stir in sun-dried tomatoes and chicken broth. Bring to a gentle simmer, scraping up any browned bits from the skillet.
- Pour in heavy cream and let simmer for 3-4 minutes until slightly thickened. Stir in grated Parmesan cheese until melted.
- Return the cooked shrimp and drained pasta to the skillet. Toss to combine, adding reserved pasta water as needed to reach desired consistency.
- Taste and adjust seasoning with salt and pepper. Garnish with fresh basil before serving.
