- Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 5-7 minutes until golden brown and cooked through. Remove from skillet and set aside.
- In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Pour in diced tomatoes and bring to a simmer for 5 minutes.
- Reduce heat to low and stir in heavy cream and Italian seasoning. Heat through, stirring occasionally.
- Return the cooked chicken to the skillet and add the drained pasta. Toss everything together until well combined.
- Stir in grated Parmesan cheese and adjust seasoning with salt and pepper as needed.
- Serve hot, garnished with fresh basil leaves.
