Method
 

  1. Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 5-7 minutes until golden brown and cooked through. Remove from skillet and set aside.
  3. In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  4. In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Pour in diced tomatoes and bring to a simmer for 5 minutes.
  5. Reduce heat to low and stir in heavy cream and Italian seasoning. Heat through, stirring occasionally.
  6. Return the cooked chicken to the skillet and add the drained pasta. Toss everything together until well combined.
  7. Stir in grated Parmesan cheese and adjust seasoning with salt and pepper as needed.
  8. Serve hot, garnished with fresh basil leaves.
