Instructions
 

  • Season the chicken breasts with salt and pepper on both sides.
  • Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side until golden brown and fully cooked. Remove from skillet and set aside.
  • In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  • Stir in chopped sun-dried tomatoes and cook for an additional 2 minutes.
  • Pour in heavy cream and chicken broth, then add Italian seasoning. Stir and bring to a gentle simmer, cooking for about 5 minutes.
  • Add fresh spinach and grated Parmesan cheese, stirring until the spinach wilts and the cheese melts. Return the cooked chicken to the skillet, spooning the sauce over it.
  • Let everything simmer together for about 2-3 minutes to heat through. Garnish with fresh basil before serving.
