- Wash the zucchinis thoroughly and cut them into fry-shaped pieces, about 1/4 inch thick. Set aside on a paper towel to absorb excess moisture.
- In a medium bowl, combine breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix well.
- In another bowl, beat the eggs. Dip each zucchini fry into the beaten eggs, allowing excess to drip off, then roll in the breadcrumb mixture until fully coated.
- Preheat the air fryer to 400°F (200°C). Lightly spray the basket with olive oil to prevent sticking.
- Place the coated zucchini fries in a single layer in the air fryer basket. Cook for 10-12 minutes, flipping halfway through until golden brown and crispy.
- Remove the fries from the air fryer and place them on a serving platter. Garnish with chopped parsley and serve immediately with your favorite dipping sauce.
