- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt, pepper, garlic powder, onion powder, and paprika on both sides.
- Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of crushed cornflakes and shredded cheddar cheese.
- Coat each chicken breast in flour, then dip in the beaten eggs, and finally coat with the cornflake and cheese mixture, pressing gently to adhere.
- Arrange the coated chicken on a baking sheet lined with parchment paper. Lightly spray the tops with cooking spray or drizzle with olive oil.
- Bake for 25-30 minutes, or until the chicken is cooked through and the coating is golden brown and crispy. The internal temperature should reach 165°F (75°C).
- Let the chicken rest for a few minutes before slicing and serving.
