Method
 

  1. Preheat your oven to 220 °C (428 °F) and line a baking sheet with parchment paper.
  2. Wash the small potatoes thoroughly under cold water, then cut them in half and place them in a large bowl.
  3. In a separate bowl, combine the finely chopped garlic and freshly grated Parmesan cheese.
  4. Drizzle the olive oil over the halved potatoes, then sprinkle with oregano, paprika, salt, and pepper. Add the garlic and Parmesan mixture and toss until evenly coated.
  5. Arrange the coated potatoes on the baking sheet, cut side down, and bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  6. Remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
