Method
- Preheat your oven to 400°F (200°C).
- Pat the chicken breasts dry with paper towels and place them on a cutting board.
- In a shallow dish, mix together the flour, paprika, garlic powder, salt, and pepper.
- Place the beaten eggs in a second shallow dish and panko breadcrumbs in a third shallow dish.
- Dredge each chicken breast in the flour mixture, shaking off excess. Then dip in the beaten eggs, allowing excess to drip off. Finally, coat with panko breadcrumbs, pressing gently to adhere.
- In a large 12-inch oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 3 to 4 minutes per side until golden brown.
- Sprinkle the crumbled feta cheese evenly over the chicken breasts.
- Transfer the skillet to the preheated oven and bake for 15 to 20 minutes, or until the chicken reaches an internal temperature of 165°F and the feta is slightly melted.
- Remove from the oven, let rest for 3 minutes, then drizzle the hot honey over the chicken.
- Garnish with fresh parsley before serving.
Notes
If you don't have hot honey, make your own by mixing 2 parts honey with 1 part hot sauce or red pepper flakes. For extra crispy chicken, double coat by repeating the egg and breadcrumb steps. Chicken thighs can be substituted for breasts with slightly longer cooking time (18 to 22 minutes).
