Instructions
 

  • In a large bowl, combine olive oil, minced garlic, lemon zest, lemon juice, oregano, paprika, salt, and pepper.
  • Add the chicken thighs to the marinade, ensuring they are well-coated. Let marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  • Preheat your oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.
  • Arrange the marinated chicken thighs skin-side up on the baking sheet, spaced evenly.
  • Roast in the preheated oven for 35-40 minutes, or until the skin is golden brown and the internal temperature reaches 165°F (75°C).
  • For extra crispiness, broil the chicken for an additional 2-3 minutes, watching closely to prevent burning.
  • Let the chicken rest for 5-10 minutes before serving. Garnish with chopped parsley.
