Method
 

  1. In a large bowl, mix together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, paprika, salt, and pepper to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well-coated. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator for enhanced flavor.
  3. Preheat the oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.
  4. Arrange the marinated chicken thighs skin-side up on the baking sheet. Drizzle any leftover marinade over the chicken and season with additional salt and pepper if desired.
  5. Bake the chicken in the preheated oven for 35-40 minutes, or until golden brown and the internal temperature reaches 165°F (75°C).
  6. For extra crispiness, broil the chicken for an additional 2-3 minutes, watching closely to prevent burning.
  7. Remove the chicken from the oven and let it rest for a few minutes before serving. Garnish with freshly chopped parsley.
