Crispy Zucchini Garlic Bites

Ingredients
  

  • 2 large zucchini about 2 cups shredded
  • 3-4 cloves garlic minced
  • 0.75 cup Parmesan cheese grated
  • 0.5 cup panko breadcrumbs
  • 1 large egg beaten
  • 0.25 cup fresh herbs chives, parsley, basil, chopped
  • sea salt and black pepper to taste
  • cooking oil spray

  • Large mixing bowl

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Shred zucchini, place in towel, and squeeze out moisture.
  2. Transfer zucchini to a bowl. Add garlic, Parmesan, breadcrumbs, egg, and herbs. Season with salt and pepper. Mix until combined.
  3. Scoop mixture with tablespoon or cookie scoop, roll into balls, and place on baking sheet 1 inch apart.
  4. Spray tops with cooking oil. Bake 18–22 minutes until golden brown and firm.
  5. Cool 2–3 minutes before serving. Serve warm with dipping sauce.

Notes

Remove as much water as possible from zucchini for crispiness. Fresh Parmesan gives best results. Adjust breadcrumbs or egg if mixture too wet or dry.
