  • 4 cups chicken broth
  • 1 package ramen noodles discard the seasoning packet
  • 2 cups mixed vegetables e.g., bok choy, bell peppers, carrots
  • 1 lb protein chicken, pork, beef, or tofu
  • 2 tbsp soy sauce
  • 1 Non-stick cooking spray

Method
 

  1. Prepare the Crock Pot: Begin by spraying your slow cooker with non-stick cooking spray for easy cleanup.
  2. Add Broth: Pour 4 cups of chicken broth into the Crock Pot.
  3. Add Protein: Place your chosen protein (chicken, pork, beef, or tofu) into the broth.
  4. Incorporate Vegetables: Add 2 cups of fresh mixed vegetables to the pot.
  5. Season: Stir in 2 tablespoons of soy sauce to bring out the flavors.
  6. Cook: Cover and cook on low for 4 hours.
  7. Add Noodles: After 4 hours, stir in the ramen noodles and let the mixture cook for an additional 10-15 minutes, until the noodles are tender.
  8. Serve: Once the noodles are cooked through, taste and adjust seasoning as needed. Serve hot and enjoy!

Notes

Gluten-Free Option: Use gluten-free ramen noodles and gluten-free soy sauce (tamari).
Storage: Store leftovers in an airtight container for up to 3 days. Freeze broth and meat mixture without noodles for up to 1 month.
