  • 4 pieces boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup bell peppers, sliced (any color)
  • 1 cup corn (fresh or frozen)
  • to taste Fresh parsley, chopped (for garnish)

Instructions
 

  • Place the chicken breasts at the bottom of the crockpot and season with salt, pepper, oregano, basil, and paprika.
  • Pour chicken broth over the chicken, then add diced tomatoes, onion, garlic, bell peppers, and corn.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Once cooked, shred the chicken and return it to the crockpot, stirring it into the sauce.
  • Serve in bowls and garnish with fresh parsley.
