  • 4 pieces boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup bell peppers, sliced (any color)
  • 1 cup corn (fresh or frozen)
  • to taste Fresh parsley, chopped (for garnish)

Method
 

  1. Place the chicken breasts at the bottom of the crockpot and season with salt, pepper, oregano, basil, and paprika.
  2. Pour chicken broth over the chicken, then add diced tomatoes, onion, garlic, bell peppers, and corn.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Once cooked, shred the chicken and return it to the crockpot, stirring it into the sauce.
  5. Serve in bowls and garnish with fresh parsley.
