Ingredients

  • 1 lb kielbasa or smoked sausage sliced into 1-inch pieces
  • 1 lb fresh green beans trimmed
  • 1 lb baby potatoes halved (red or yellow)
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 cup chicken broth low-sodium
  • 2 tablespoons butter cut into pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika optional
  • 1/2 teaspoon salt or to taste
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley chopped, for garnish
  • 1 tablespoon grated Parmesan cheese optional, for garnish

Equipment

  • Crockpot or slow cooker
  • cutting board
  • knife
  • measuring cups

Method

  1. Slice kielbasa into 1-inch pieces, trim green beans, halve baby potatoes, and chop onion.
  2. Add sliced kielbasa, green beans, halved potatoes, and chopped onion to the crockpot in layers.
  3. Sprinkle minced garlic, garlic powder, onion powder, smoked paprika, salt, and black pepper evenly over the ingredients.
  4. Pour chicken broth over everything and dot the top with butter pieces.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours, until potatoes are fork-tender.
  6. Gently stir halfway through cooking to redistribute seasonings and ensure even cooking.
  7. Check seasoning and adjust if needed. Sprinkle with fresh parsley and Parmesan cheese before serving.

Notes

For extra flavor, sear kielbasa in a pan before adding to crockpot. Add green beans during the last 2-3 hours if you prefer them less soft. Store leftovers in an airtight container for up to 3 days.
