- In a skillet over medium heat, brown the ground beef or Italian sausage until fully cooked. Drain excess fat.
- Add chopped onion and minced garlic to the skillet. Cook until the onion is translucent, about 3-4 minutes.
- Transfer the meat mixture to the crockpot. Add crushed tomatoes, tomato sauce, broth, dried basil, oregano, salt, and pepper. Stir to combine.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, stir in the broken lasagna noodles. Cover and cook until noodles are tender.
- Stir in ricotta cheese and half of the shredded mozzarella cheese until well combined.
- Serve hot, garnished with remaining mozzarella cheese and fresh herbs.
