Crockpot Parmesan Garlic Chicken Mac and Cheese

This Crockpot Parmesan Garlic Chicken Mac and Cheese is an easy and delicious dinner recipe that combines all the flavors of Mac and cheese with Parmesan Garlic Chicken.

Ingredients
  

  • 1 lb chicken breast
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1 Buffalo Wild Wings Parmesan Garlic Sauce Enough to cover chicken, plus extra if desired
  • 8 oz elbow macaroni noodles
  • 2 cups whole milk
  • 2 1/2 cups Colby Jack cheese Freshly shredded from a block recommended
  • 8 oz cream cheese
  • 1 Parmesan cheese For topping
  • 1 Parsley For topping

Equipment

  • Large crockpot / slow cooker
  • Pot for boiling pasta

Method
 

  1. Add chicken, salt, pepper, paprika, and garlic powder to a slow cooker. Add just enough of the Parmesan Garlic sauce to cover the chicken.
  2. Cook on low for about 4 hours or until the chicken reaches 165 degrees. Shred or chop up chicken and add it back to the crockpot. Add a little bit more Parmesan garlic sauce to the chicken if desired.
  3. Boil macaroni in a pot of water for about 3 minutes and drain. This will not fully cook the pasta.
  4. In the crock pot combine the chicken with macaroni, milk, Colby Jack cheese, and cream cheese. Stir everything together and cook on low for about an hour (stir at least a few times during this hour).
  5. Top with Parmesan cheese and parsley. Enjoy!

Notes

Always cook chicken until it reaches 165 degrees. Be sure to only boil the macaroni noodles for 3 minutes to ensure that the pasta does not over cook or turn mushy in the crockpot. Use freshly shredded Colby Jack cheese from a block for a creamier consistency.
