Ingredients
  

Essential Ingredients

  • 2 pounds pork shoulder or pork loin trimmed and cut into chunks
  • 1 medium onion sliced
  • 2 cloves garlic minced
  • 1 teaspoon caraway seeds
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 can (14 oz) sauerkraut drained and rinsed
  • 1 cup chicken broth
  • 2 medium apples cored and sliced
  • 1 tablespoon olive oil

Optional Ingredients for Extra Flavor

  • 1/2 cup diced carrots for added sweetness and color
  • 1/2 cup diced potatoes for a heartier meal
  • 1 tablespoon brown sugar to enhance the sweetness of the apples
  • 1 teaspoon smoked paprika for a smoky flavor
  • to taste fresh herbs (thyme or parsley) for garnish

Instructions
 

  • Sear the pork in a skillet with olive oil until golden brown, about 5-7 minutes. Remove and set aside.
  • Layer sliced onion and minced garlic in the bottom of the crockpot. Sprinkle caraway seeds, black pepper, and salt over the onions.
  • Place the seared pork on top, followed by the sauerkraut, chicken broth, and sliced apples.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours until the pork is tender and easily shredded.
  • Shred the pork with two forks and mix it back into the sauerkraut and apples. Serve hot.

Notes

This dish pairs well with crusty bread or mashed potatoes.
