Method
- Sear the pork in a skillet with olive oil until golden brown, about 5-7 minutes. Remove and set aside.
- Layer sliced onion and minced garlic in the bottom of the crockpot. Sprinkle caraway seeds, black pepper, and salt over the onions.
- Place the seared pork on top, followed by the sauerkraut, chicken broth, and sliced apples.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the pork is tender and easily shredded.
- Shred the pork with two forks and mix it back into the sauerkraut and apples. Serve hot.

This dish pairs well with crusty bread or mashed potatoes.
