- Slice the smoked sausage into bite-sized pieces.
- Chop the onion, bell pepper, and dice the potatoes.
- In the crockpot, combine the sliced sausage, chopped onion, minced garlic, bell pepper, diced potatoes, diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
- Stir the ingredients together until well mixed.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
- About 15 minutes before serving, sprinkle the shredded cheddar cheese on top and cover until melted.
- Garnish with fresh parsley before serving.
