  • 4 cups Diced potatoes Use any variety like russet or Yukon gold.
  • 1 can Diced tomatoes 14.5 oz, undrained for moisture.
  • 1 cup Chicken broth Enhances flavor and helps cook the potatoes.
  • 1 teaspoon Italian seasoning Adds a lovely Italian flair.
  • to taste Salt Enhances all flavors.
  • to taste Pepper Enhances all flavors.
  • 1 cup Shredded cheddar cheese Melty topping for comfort.

Method
 

  1. Slice the smoked sausage into bite-sized pieces.
  2. Chop the onion, bell pepper, and dice the potatoes.
  3. In the crockpot, combine the sliced sausage, chopped onion, minced garlic, bell pepper, diced potatoes, diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
  4. Stir the ingredients together until well mixed.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
  6. About 15 minutes before serving, sprinkle the shredded cheddar cheese on top and cover until melted.
  7. Garnish with fresh parsley before serving.
