Ingredients
  

  • 1 pound Smoked sausage Choose your favorite type, such as kielbasa or andouille.
  • 1 medium Onion Chopped for sweetness and depth.
  • 2 cloves Garlic Minced for aroma and taste.
  • 4 cups Diced potatoes Use any variety like russet or Yukon gold.
  • 1 can Diced tomatoes 14.5 oz, undrained for moisture.
  • 1 cup Chicken broth Enhances flavor and helps cook the potatoes.
  • 1 teaspoon Italian seasoning Adds a lovely Italian flair.
  • to taste Salt Enhances all flavors.
  • to taste Pepper Enhances all flavors.
  • 1 cup Shredded cheddar cheese Melty topping for comfort.
  • to garnish Fresh parsley Chopped for a fresh touch.

Instructions
 

  • Slice the smoked sausage into bite-sized pieces.
  • Chop the onion, bell pepper, and dice the potatoes.
  • In the crockpot, combine the sliced sausage, chopped onion, minced garlic, bell pepper, diced potatoes, diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
  • Stir the ingredients together until well mixed.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
  • About 15 minutes before serving, sprinkle the shredded cheddar cheese on top and cover until melted.
  • Garnish with fresh parsley before serving.
