Method
- Place the boneless, skinless chicken breasts at the bottom of your crockpot.
- Layer in the drained white beans, corn, diced green chilies, chopped onion, and minced garlic. Sprinkle the spices over the top.
- Pour the chicken broth over the ingredients.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken with a fork and stir in the sour cream and softened cream cheese until well combined.
- Serve hot, garnished with fresh cilantro and lime wedges.
