- In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, and salt. In a separate bowl, combine the wet ingredients: milk, egg, melted butter, and vanilla extract. Mix until smooth, then pour the wet mixture into the dry ingredients and stir gently until just combined.
- Preheat a non-stick skillet or griddle over medium heat and lightly grease it. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown.
- In a separate skillet, cook the bacon until crispy. Remove and drain on paper towels. In the same skillet, cook the eggs to your desired doneness.
- Assemble the stack by placing a pancake on a plate, adding a slice of bacon, followed by another pancake. Repeat until you have a stack of 2-3 pancakes. Top with a fried egg, drizzle with maple syrup, sprinkle fresh berries around, and dust with powdered sugar.
