Ingredients
  

For the Carrot Cake Bars

  • 2 cups All-purpose flour Provides structure to the bars.

For the Cream Cheese Frosting

  • 8 oz Cream cheese Softened for easy mixing.
  • 1/4 cup Unsalted butter Softened for easy mixing.
  • 2 teaspoons Vanilla extract Adds flavor to the frosting.
  • 3-4 cups Powdered sugar Adjust for desired frosting consistency.
  • Pinch Salt Balances sweetness in frosting.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13-inch baking pan and line the bottom with parchment paper.
  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In another bowl, whisk together the eggs and sugar until well combined. Add the oil and vanilla extract, mixing until smooth.
  • Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Fold in the grated carrots, nuts, and raisins if using.
  • Pour the batter into the prepared baking pan and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the bars to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • For the frosting, beat together the cream cheese and butter until smooth. Add the vanilla and powdered sugar, mixing until creamy. Adjust the sugar for desired consistency.
  • Once the bars are completely cool, spread the cream cheese frosting on top. Cut into squares and serve.

Notes

These bars can be customized with nuts, raisins, or even coconut. They are perfect for gatherings or as a sweet treat at home.
