- Heat olive oil in a large skillet over medium heat.
- Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the bell pepper, zucchini, and cherry tomatoes. Cook for another 5-7 minutes until the vegetables are tender.
- Return the chicken to the skillet and add oregano, salt, and black pepper. Stir to combine and heat through for another 2-3 minutes.
- Garnish with fresh basil before serving.
