Ingredients
  

Chicken
  • 1 whole chicken (about 4-5 lbs)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste salt and pepper
  • 1 whole lemon, quartered
  • to garnish fresh herbs (like parsley or cilantro)

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the whole chicken under cold water and pat dry with paper towels.
  3. In a small bowl, combine olive oil, minced garlic, paprika, thyme, rosemary, salt, and pepper to create a seasoning paste.
  4. Rub the seasoning all over the chicken, including under the skin, and place lemon quarters inside the cavity.
  5. Transfer the chicken to a roasting pan, breast side up, and tuck the wing tips under the body.
  6. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
  8. Carve the chicken and serve it on a platter, garnished with fresh herbs.

Notes

Ensure to check the internal temperature for safe consumption. Basting the chicken during roasting can enhance moisture.
