- In a mixing bowl, combine the creamy peanut butter and granulated sugar. Mix until well blended.
- Add the egg, vanilla extract, baking soda, and salt to the mixture. Stir until fully incorporated.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop out portions of the dough and roll them into balls. Place them on the baking sheet, spaced about 2 inches apart.
- Flatten each ball slightly with the back of a fork to create a crisscross pattern.
- Bake for 10-12 minutes until the edges are lightly golden and the centers remain soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature. They can also be frozen for up to three months.
