Ingredients
  

For the cookie dough

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions
 

  • In a mixing bowl, combine the creamy peanut butter and granulated sugar. Mix until well blended.
  • Add the egg, vanilla extract, baking soda, and salt to the mixture. Stir until fully incorporated.
  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Scoop out portions of the dough and roll them into balls. Place them on the baking sheet, spaced about 2 inches apart.
  • Flatten each ball slightly with the back of a fork to create a crisscross pattern.
  • Bake for 10-12 minutes until the edges are lightly golden and the centers remain soft.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature. They can also be frozen for up to three months.
