- Prepare the potato mixture by combining chilled mashed potatoes, grated cheese, chopped green onions, flour, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
- Shape the mixture into small balls or oval patties.
- Set up a breading station with beaten eggs in one bowl and breadcrumbs in another. Dip each croquette in the egg, then roll in breadcrumbs.
- Heat vegetable oil in a skillet over medium heat. Fry the croquettes in batches for 3-4 minutes on each side until golden brown.
- Drain the fried croquettes on paper towels to remove excess oil.
