Ingredients
  

For the potato mixture

  • 2 cups mashed potatoes Chilled for better texture.
  • 1/2 cup grated cheese Cheddar or mozzarella works best.
  • 1/4 cup finely chopped green onions Adds fresh taste and color.
  • 1/4 cup all-purpose flour Helps bind the mixture.
  • 1/2 teaspoon garlic powder For savory flavor.
  • 1/2 teaspoon onion powder Enhances overall taste.
  • to taste none salt and pepper To season the mixture.
  • 1 cup breadcrumbs For crispy coating.
  • 2 none eggs, beaten Helps breadcrumbs stick.
  • as needed none vegetable oil For frying.

Instructions
 

  • Prepare the potato mixture by combining chilled mashed potatoes, grated cheese, chopped green onions, flour, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
  • Shape the mixture into small balls or oval patties.
  • Set up a breading station with beaten eggs in one bowl and breadcrumbs in another. Dip each croquette in the egg, then roll in breadcrumbs.
  • Heat vegetable oil in a skillet over medium heat. Fry the croquettes in batches for 3-4 minutes on each side until golden brown.
  • Drain the fried croquettes on paper towels to remove excess oil.
  • Serve warm with your favorite dipping sauce.

Notes

Use chilled mashed potatoes for better texture. Maintain oil temperature for crispy results.
