Dump-and-Bake Chicken Tzatziki Rice

Ingredients
  

  • 1.5 lbs chicken boneless thighs or breasts
  • 1.5 cups long-grain white rice uncooked
  • 2.5 cups chicken broth
  • 1 cup Greek yogurt
  • 1/2 cup cucumber diced
  • 3 cloves garlic minced
  • 2 tablespoons fresh dill chopped
  • 2 tablespoons lemon juice fresh
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 375°F and grease casserole dish.
  2. Spread uncooked rice evenly across the bottom of the dish.
  3. Place seasoned chicken (salt and pepper) on top of rice.
  4. Mix Greek yogurt, diced cucumber, minced garlic, fresh dill, and lemon juice to create tzatziki sauce.
  5. Spoon tzatziki over chicken.
  6. Pour chicken broth over everything to cover the rice.
  7. Cover tightly with aluminum foil.
  8. Bake for 45-50 minutes until chicken is cooked through and rice is fluffy.

Notes

Brown rice or quinoa can be substituted (add extra cooking time for brown rice). Low-fat yogurt can be used for a lighter version. Chicken thighs or breasts both work well. Cover tightly with foil to ensure rice cooks properly. Don't lift the foil during cooking to keep steam in. Let rest for 5 minutes after baking before serving.
