Ingredients
  

  • 2 lbs chicken breasts similar sizes for even cooking
  • 1 cup teriyaki sauce quality bottled sauce
  • 1 cup broccoli florets fresh or frozen
  • 1 tablespoon cornstarch optional, for thicker sauce
  • 2 tablespoons water optional, for cornstarch slurry

Method
 

  1. Place chicken breasts in a single layer at the bottom of the crockpot.
  2. Pour teriyaki sauce evenly over the chicken, coating all pieces.
  3. Cover and cook on low for 6 hours.
  4. At the 5.5-hour mark, add broccoli florets around the chicken and replace the lid.
  5. Cook for the final 30 minutes until broccoli is crisp-tender.
  6. Optional: For thicker sauce, mix cornstarch with water and stir into the crockpot during the last 30 minutes.
  7. Shred chicken with two forks directly in the crockpot if desired, or serve whole.

Notes

Chicken thighs can be substituted for juicier meat. Don't overcook the broccoli by adding it in the last 30 minutes to keep it crisp-tender. Use a high-quality teriyaki sauce for the best flavor. Serve over rice with sesame seeds and green onions for garnish. Store leftovers in an airtight container for 3 to 4 days or freeze for up to 3 months.
