Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1 cup ricotta cheese whole milk preferred
  • 1/2 cup grated Parmesan cheese freshly grated
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning or mix of oregano, basil, and thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley optional
  • 2 tablespoons olive oil
  • 1 cup marinara sauce optional, for serving

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil to prevent the chicken from sticking.
  2. Pat the chicken breasts dry with paper towels—this helps them brown beautifully. Place them in the prepared baking dish.
  3. In a medium bowl, mix together ricotta cheese, Parmesan, garlic powder, Italian seasoning, salt, pepper, and parsley (if using) until well combined and creamy.
  4. Spread the ricotta mixture evenly over each chicken breast, making sure each piece is generously covered for maximum flavor.
  5. Drizzle the olive oil over the ricotta-topped chicken. This helps create a golden, bubbly topping.
  6. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C) in the thickest part and the ricotta topping is golden and bubbly.
  7. If using marinara sauce, warm it while the chicken bakes. Spoon it over the cooked chicken or serve on the side.
  8. Let the chicken rest for 2-3 minutes before serving. Enjoy with pasta, vegetables, or a fresh salad.

Notes

Start with room temperature chicken for even cooking. For extra crispy top, broil for the last 2-3 minutes but watch closely. Can substitute ricotta with blended cottage cheese or cream cheese mixed with milk. Store leftovers in airtight container for up to 3 days.
