Easy Beef and Broccoli Stir Fry

Quick and healthy 30-minute beef and broccoli stir fry in a rich garlic-ginger sauce. Better than takeout and perfect for meal prep!

Ingredients
  

  • 1 lb London broil steak thinly sliced into small strips
  • 2 tbsp olive oil or vegetable oil
  • 1 lb broccoli cut into florets (about 6 cups)
  • 2 tsp sesame seeds optional, for garnish
  • 0.5 cup hot water
  • 6 tbsp low sodium soy sauce or tamari/coconut aminos
  • 2 tbsp sesame oil
  • 2 tbsp light brown sugar packed
  • 1.5 tbsp cornstarch
  • 4 cloves garlic minced
  • 2 tsp ginger paste or freshly grated ginger
  • 0.5 tsp black pepper

Equipment

  • large skillet or wok
  • Small mixing bowl
  • Sharp knife for slicing beef

Method
 

  1. If serving with rice, start cooking it according to package instructions.
  2. Cut steak thinly across the grain. Partially frozen meat slices more easily.
  3. In a small bowl, mix hot water, soy sauce, sesame oil, brown sugar, cornstarch, garlic, ginger, and pepper until smooth.
  4. Heat 1 tbsp sesame oil in a skillet over medium. Add broccoli and 2 tbsp water, cover, and steam for 5 minutes until bright green. Transfer to a bowl.
  5. Heat remaining oil in skillet over medium-high. Add beef in a single layer and sear for ~2 minutes per side until browned (cook in batches if needed).
  6. Pour sauce over beef. Reduce heat and simmer for 4–5 minutes until thickened.
  7. Add broccoli back to skillet and toss to coat.
  8. Serve hot over rice and garnish with sesame seeds, if desired.

Notes

Slice steak thinly against the grain for tenderness. Use fresh garlic and ginger for best flavor. For meal prep, keep sauce separate and mix upon reheating.
