Ingredients

  • 1 yellow onion large
  • 1 cup sharp cheddar cheese shredded
  • 1 tbsp olive oil or melted butter
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp dried parsley optional

Equipment

  • baking sheet
  • parchment paper
  • sharp knife
  • Pastry brush

Method

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Peel the onion and slice it into ¼-inch thick rings. Gently separate the rings.
  3. Arrange the onion rings in a single layer on the prepared baking sheet, making sure they don’t overlap.
  4. Lightly brush the tops of the onion rings with olive oil or melted butter.
  5. Sprinkle each ring generously with shredded cheddar cheese, ensuring full coverage.
  6. Season with salt, black pepper, and parsley if using.
  7. Bake for 15–20 minutes until the cheese is melted, bubbly, and golden, and the onions are tender.
  8. Let cool for a few minutes so the cheese firms up and crisps.
  9. Transfer carefully to a serving plate. Serve warm and enjoy!

Notes

Slice onions evenly and avoid overlapping for best crisping. Use plenty of cheese for that irresistible crust. Let cool briefly for firm texture.
