Method
 

  1. Brown the ground beef in a skillet over medium heat for 5-7 minutes, breaking it apart as it cooks. Drain excess fat.
  2. Sauté chopped onion and minced garlic in the same skillet for 3-4 minutes until the onion is translucent.
  3. Transfer the beef mixture to the crockpot, scraping the skillet to include all flavorful bits.
  4. Add canned diced tomatoes, tomato sauce, beef broth, frozen mixed vegetables, oregano, basil, salt, and pepper to the crockpot. Stir to combine.
  5. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours until vegetables are tender.
  6. If desired, sprinkle shredded cheese on top before serving for a creamy finish.
  7. Serve hot with crusty bread, rice, or a fresh salad.
