Ingredients
  

  • 4 pieces Boneless, skinless chicken breasts Provides protein and flavor.
  • 1 pound Baby potatoes Halved for even cooking.
  • 1 cup Carrots Sliced for sweetness and color.
  • 1 medium Onion Chopped for flavor.
  • 3 cloves Garlic Minced for aroma.
  • 1 cup Chicken broth Adds moisture and flavor.
  • 2 teaspoons Dried thyme Herb for seasoning.
  • 2 teaspoons Dried rosemary Herb for seasoning.
  • to taste Salt For seasoning.
  • to taste Pepper For seasoning.
  • 2 tablespoons Olive oil For coating vegetables.
  • to taste Fresh parsley Chopped, for garnish.

Instructions
 

  • Rinse the chicken breasts under cold water and pat dry. Season both sides with salt, pepper, thyme, and rosemary.
  • Halve the baby potatoes and place them in a large bowl.
  • Add sliced carrots, chopped onion, and minced garlic to the bowl with potatoes. Drizzle with olive oil and toss to coat.
  • Place the seasoned chicken breasts at the bottom of the crockpot. Layer the vegetable mixture on top.
  • Pour the chicken broth over the ingredients in the crockpot.
  • Cover the crockpot and set it to cook on low for 6-7 hours or high for 3-4 hours.
  • Once cooked, garnish with fresh parsley before serving.
