Ingredients
  

  • 4 pieces Boneless, skinless chicken breasts Provides protein and flavor.
  • 1 pound Baby potatoes Halved for even cooking.
  • 1 cup Carrots Sliced for sweetness and color.
  • 1 medium Onion Chopped for flavor.
  • 3 cloves Garlic Minced for aroma.
  • 1 cup Chicken broth Adds moisture and flavor.
  • 2 teaspoons Dried thyme Herb for seasoning.
  • 2 teaspoons Dried rosemary Herb for seasoning.
  • to taste Salt For seasoning.
  • to taste Pepper For seasoning.
  • 2 tablespoons Olive oil For coating vegetables.
  • to taste Fresh parsley Chopped, for garnish.

Method
 

  1. Rinse the chicken breasts under cold water and pat dry. Season both sides with salt, pepper, thyme, and rosemary.
  2. Halve the baby potatoes and place them in a large bowl.
  3. Add sliced carrots, chopped onion, and minced garlic to the bowl with potatoes. Drizzle with olive oil and toss to coat.
  4. Place the seasoned chicken breasts at the bottom of the crockpot. Layer the vegetable mixture on top.
  5. Pour the chicken broth over the ingredients in the crockpot.
  6. Cover the crockpot and set it to cook on low for 6-7 hours or high for 3-4 hours.
  7. Once cooked, garnish with fresh parsley before serving.
