- Rinse the chicken breasts under cold water and pat dry. Season both sides with salt, pepper, thyme, and rosemary.
- Halve the baby potatoes and place them in a large bowl.
- Add sliced carrots, chopped onion, and minced garlic to the bowl with potatoes. Drizzle with olive oil and toss to coat.
- Place the seasoned chicken breasts at the bottom of the crockpot. Layer the vegetable mixture on top.
- Pour the chicken broth over the ingredients in the crockpot.
- Cover the crockpot and set it to cook on low for 6-7 hours or high for 3-4 hours.
- Once cooked, garnish with fresh parsley before serving.
